A commercial spiral mixer kneads bread and pizza dough in bulk. The bowl turns under a fixed spiral hook, which develops the gluten with less friction and less heat, so the dough comes out the same every day and nobody is kneading it by hand. If bread or pizza is the core of what you sell, this is the machine to buy.

A spiral mixer is built for dough and little else, so a kitchen that also whips cream or beats batter wants a planetary machine as well. Our commercial spiral mixers include small models that mix around 10 kilos of dough for a small bakery up to heavy-duty machines that handle batches of 200 kilos or more for a wholesale bakery, so you can buy the size that suits your business at its current size, then size up as your business grows. They sit with the rest of our bakery kitchen appliances, with fast nationwide shipping anywhere in Australia.

These are the top FAQs for Commercial Spiral Mixers

What sizes of commercial spiral mixers do you stock?

Sizes start at compact models that take 10 kilos of dough and run up to models that handle batches of 200 kilos or more. There are single- and dual-speed options, so you can control how fast the dough is kneaded.

Equally, if you want something with a slightly different mixing format, we also stock a range of planetary mixers that come with additional attachments. If you want something purely for dough, we recommend a spiral mixer, but if you need something with whisking attachments for things like cream, a planetary mixer is also a great investment.

Which spiral mixer should I buy?

Four things decide it: capacity, speed, bowl type and any extra features you need.

Capacity is the most important factor when you’re narrowing down your options. You may already have an idea of the volume or weight of dough you need on a daily basis. If you do, we recommend looking for an option that can deliver around 20% more than your maximum needs. We stock models that are compact and make smaller batches of around 10 kilos of dough, ranging up to heavy-duty spiral mixers that handle batches of 200 kilos or more. That leaves you some leeway if your volumes grow.

Keep in mind that bowl capacity is not the same as weight capacity. A 200 litre bowl doesn’t output 200 kilos, and its input isn’t 200 kilos either. Every mixer has a maximum flour weight, and exceeding it risks overloading the motor. That isn’t a manufacturing defect, so your warranty won’t cover it.

Speed matters too. You don’t want to overwork your dough, or you’ll risk getting flat and chewy results. However, the dough also needs to be properly developed. Choosing options with dual-speed options that can be adjusted to different dough types, along with additional features like timers that’ll automatically switch off when your dough is done make this process smoother. It’ll then be ready to be shaped by your dough roller or put into a bread prover before baking.

Bowl type is worth a thought as well. Removable bowls are easier to clean, while fixed bowl spiral mixers are often more hard-wearing.

If you’re unsure of which specifications will suit your bakery or restaurant, we’re happy to help you choose. Contact the team at REO at any stage and we’ll be able to give you a personal recommendation.

Do you stock heavy-duty spiral mixers?

Yes, we supply heavy-duty spiral mixers built for high-volume baking, including models that handle batches of 200 kilos or more. If you need something larger than what you can see in the collection, we can source it on request, so contact the team at REO and let us know what you need. Many large models come with twin arms that knead, lift, stretch and fold the dough.

Is a twin-speed mixer worth it?

Twin speed gives you two settings for the two stages of a bread mix. The first speed setting may be used just for mixing your dry and wet ingredients, while the second setting is for developing the dough after it has rested but before it’s ready to be put in the oven. Having twin-speed or multiple-speed settings generally will give you more versatility, with better options when it comes to different flour and bread types.

How do I clean a commercial spiral mixer?

Cleaning and maintaining your spiral mixer depends on the brand and bowl type you’ve chosen. If you’ve chosen a model with a removable bowl, cleaning it is as simple as disconnecting the bowl and spiral arm to wash them.

If you have a fixed bowl, you’ll need to adjust the way you clean somewhat. Each model will have slightly different requirements, so we recommend checking the manufacturer's instructions. Equally, regularly check the moveable parts and motor to ensure it’s adequately lubricated and add oil if and when needed.

Are there small spiral mixers for a small bakery?

Yes. Not every bakery needs high volumes of dough, and not every kitchen has the space for a big machine. Our range includes smaller models offering 10 to 20 litres of capacity. They don’t need to be filled to maximum capacity either, meaning you can adjust and refine how much you make without needing to get a large model.

Can I get a custom spiral mixer?

There are no custom spiral mixers, and you won’t need one. Spiral mixers come in 5 kilo increments - 10 kilos, 15 kilos, 20 kilos, 25 kilos and up - so a size that fits your operation almost always exists off the shelf. Certain models feature up to five speeds, along with timers that will automatically stop mixing when your dough is ready and memory settings that let you pre-organise your dough-making.

What else are commercial spiral mixers called?

You will see commercial spiral dough mixer used for the same kind of equipment. The name changes with the supplier and the region, not the job it does. Compare models on capacity, construction and the specification on each product page, and check the full commercial spiral mixers range to see every option side by side.
