You can get the whole canteen here: a pie warmer to heat and hold hot snacks, a commercial drink fridge for cold drinks on display, and an upright fridge to hold the week's stock. A surprising number of canteens run well on not much more. Delivered anywhere in Australia.
A school, worksite or office canteen serves most of its day's trade in half an hour, out of whatever power and plumbing the building already has. So canteen equipment gets chosen for that: benchtop units, reheating rather than cooking from raw, and hot holding that can be filled before the bell. Most canteen kitchen equipment needs nothing beyond a power point.
Industrial canteen equipment — a works or site canteen feeding hundreds — is a different scale and looks more like a cafeteria: batch cooking, bain maries and a staffed serving line. The dividing line is whether food is cooked on site or reheated.
Power is the constraint people discover last. Benchtop appliances are easy to buy and easy to overload a circuit with, so count what is going on each circuit before you order. Tell us the room, the covers and the power you have and request a callback — we will work out what fits.
Hot holding, cold drinks, refrigeration, a hand basin and a way to wash up. In equipment terms: a pie warmer display, a drink fridge, an upright fridge, a hand wash basin and either a sink run or an under bench dishwasher.
Everything after that is menu. A sandwich press and a microwave cover most hot items without a cooking line, and both sit on a bench. What your site is required to have — hand basins, temperature records, food handling — is set by your local council and state food authority, so confirm the list with them before you fit out.
Have it already hot. Nothing is cooked to order in a canteen rush, so the equipment that matters is holding: a pie warmer loaded before the break, a chip warmer under a lamp, a hot dog warmer for the simple items.
Load capacity is the number to check, not cooking speed. Count the hot items you sell in the busiest break and make sure the units hold that many at once. Commercial heat lamps buy you a little more room on the counter.
A display fridge the customers can reach, and bulk storage they cannot. The display unit sells drinks and cold items on its own, which is the single easiest way to take load off the counter — commercial glass door fridges do that job.
Behind the scenes, size the bulk fridge and freezer from the delivery cycle. A canteen taking one delivery a week is storing a week, and that is usually more than the room was designed for. Frozen is commercial upright freezers.
Many do, and for a reheating menu it is the right answer. Commercial benchtop appliances need no gas, no canopy and no installation beyond a power point, which matters in a building you do not own.
The limit is electrical. Several benchtop appliances on one circuit will trip it at the worst moment, and the fix is an electrician rather than a different appliance. Get the circuit checked before you add the third unit, not after.
Scale and cooking from raw. Once a canteen is feeding hundreds, reheating stops being viable and the kitchen needs batch cooking, bain maries and a proper serving line, which is commercial oven ranges and commercial bain maries territory.
It also needs extraction, which a reheating canteen often avoids entirely. That is the biggest single cost step between the two, so it is worth confirming the menu before the kitchen is designed. See also cafeteria appliances.
What the unit draws and whether your circuit will take it, whether it fits through the door and into the space with clearance around it, what the lead time is, and who installs and services it locally. Those four answers prevent most of the problems that come up in week one.
Then ask what the consumables are — pans, trays, filters — and order the spares with the unit. We can go through that list with you; the accessory ranges are in spares and accessories and food storage.
If it serves on crockery, yes, because a fifteen-minute rush produces a sink that will not clear by hand before the next one. An under bench dishwasher is the usual choice and fits under a standard bench run.
If it serves in disposables, a sink run and good commercial takeaway food containers may be enough. That is a genuine fork in the fit-out, so decide it before the benching is laid out — the benching is commercial stainless steel kitchen bench.
